Kalkandu Pongal / Rock Candy Rice Dessert



Ingredients

Rock Candy - 1 cup
Raw Rice - 1 Cup
Milk - 2 Cup
Water - 1 cup
Saffron - a pinch
Cardamon pwd / Elachi pwd - 1/4 ts
Pachhai Karporam/ Borneol Flakes - a pinch (Dissolve the Pachhai karporam in a ts of water )


Garnish

In a pan add a ts of Ghee add a ts of chopped cashew nuts, a ts of chopped almonds,a ts of raisins and fry it and keep aside.


Method


(Easier Way of Cooking Rice)

1. Wash the rice and in a pressure cooker cook add a ts of butter and rice in a 1:1:2 ratio with a pinch of saffron, for 1 cup of rice add 1 cup of water and 2 cup of milk for 4 whistles and switch off the gas and once the pressure is released, transfer the content to thick bottomed vessel and follow the step2.

(Time Consuming Way of Cooking Rice)

1. Wash the rice and in a thick bottomed vessel add ts of butter and cook the rice in a 1:1:2 ratio for 1 cup of rice add 1 cup of water and 2 cup of milk, with a pinch of saffron, stir it constantly so that the milk doesnt burn, cook the rice till it breaks into halves,almost in a mashed texture.

2. Now add the Rock Candy/Kalkandu,Cardamon pwd,Pachhai Karporam water to the rice and stir it nicely, once all the kalkandu is dissolved add the fried raisins, cahewnuts and almonds to it and switch off the gas.
