Easy way of preparing Spicy Cauliflower Pickle



Ingredients

Cauliflower florets- 1 cup
Red Chili pwd - 3 ts
Lemon juice - 3 ts
Salt for taste
Sesame Oil - 3 ts

Tempering

Mustard - 1/4 ts
Urad Dhal - 1/2 ts
Cumin Seeds/Jeera - 1/4 ts
Crushed Garlic - 2 ts
Curry Leaves - 2 twig
Red Chili - 1 no
Fenugreek seeds - a pinch (optional)

Method

1. Wash and dry the Cauliflower, cut the cauliflower in a tiny pieces as shown in the pic. Cauliflower should be dried nicely, if not the pickle will be spoiled soon.

2. In a glass bowl add Red chili pwd, lemon juice,salt and cauliflower mix it nicely.

3. In a small pan, add the oil once heated add the tempering items given in the list. Then add them to the cauliflower and mix it nicely, check the seasoning and adjust it accordingly. Cover the lid and let the pickle sit for 2 days then stir it and store it in fridge and consume it within 10days.

Spicy Sour Plums/ Spicy Jarareng / Sour Plums Pickle Indian Style / Jarareng Pickle Indian Style / Sour Prune Pickle Indian Style / Sour Prune Urukai /Sour Plums Urukai

Ingredients

Sour plums/Jarareng - 1 lb (approximately 30nos)
Oil - 25ml
Mustard Seeds - 1 ts
Asfoetida / Hing - 1 ts
Red chilies - 2 - 3 nos
Cumin Seeds - 1/4 ts
Fenugreek seeds - 1/2 ts
Curry Leaves - 1 string
Turmeric Pwd - 1 ts
Salt - 3 ts

To Grind

Mustard Seeds - 1/2 ts
Red chilies - 4 nos
Fenugreek seeds - a pinch

Method

1. Wash the sour plums with some water and pat dry it.

2. In a pan dry roast the items given in the To Grind list for 2 to 3mins in a medium flame. Cool it and coarsely grind it.

3. In the same pan heat the oil in a medium flame, once the oil is hot add the mustard seeds and when it starts to splutter, add the cumin seeds,Asfoetida, curry leaves,Fenugreek seeds and Red chili give a good stir.

4. Add the sour plums and stir it with the spices add the turmeric pwd and salt, let the plum cook in the oil no need to add any water for 15 to 20 mins..

5. Once the plums are soft, the skin peels off from the plums it is the right stage to add the grounded spice pwd, give a good stir and adjust the seasoning if required..

6. Switch off the gas and remove the pan from the stove and keep it aside once the plums are cool transfer it to a glass jar..

You can even refrigerate the pickle....As long as the pickle is covered with the oil it will be good for a month n more...

This pickle goes well with any rice especially with Rasam and Curd....

Easy way of cooking Sour Plums Pickle / Salty Sour Plums / Salty Jarareng / Salty Sour Prune / Salty n Spicy Sour Plum Pickle


Ingredients

Sour plums/Jarareng - 1 lb (Medium size approximately 30nos)
Green chili - 1 no
Turmeric Pwd - 1 ts
Salt - 4 ts
Water - 2 cups

Method

1. Wash the sour plums with some water and pat dry it.

2. In a medium heat place a vessel and pour the water once it is hot add the turmeric pwd,Sour Plums,Green chili and Salt, increase the heat and wait till the Sour Plums are fully cooked(the skin peels off and color of the plums changes to yellowish that's the right stage). It might take about 20 - 30mins approximately..

3. Switch off the gas, once it is cool enough transfer the plums to a glass jar..
It will be good if you consume it within a week or you can even refrigerate and have for more than a week ...

This pickle can be eaten as a snack and goes well with Curd rice....
