Semolina Pudding - Rava Kesari

Hey All,

To best of my knowledge i have shared the way of cooking in my style, to be honest I LIKE to COOK that too if it is for my hubby then no words I LOVED TO COOK FOR HIM. My hubby loves Semolina Pudding and this is one of his favorite dessert. I have shared my way of Semolina pudding recipe, try it and let me know your comments.




Ingredients

Semolina/Rava - 1 cup
Sugar - 2 cups
Cardamon powder - 1/4 ts
Black Raisins - 2 ts
Cashews - 2 ts
Almonds - 2 ts
Saffron - a pinch
Hot Water - 2 1/2 cups
Ghee - 5 ts

Method

1. Take a non stick pan add 2ts of ghee, add raisins fry till it fluffs and keep aside.

2. Chop the cashew and almond, fry them in the left over ghee and keep aside.

3. In the same pan roast the Semolina until the aroma comes and keep aside.

4. Now add the Hot water in the pan,let it boil meanwhile grind the saffron with 1ts of sugar and cardamon pwd in a mini mixer and dissolve the saffron mixture in the boiling water.

5. Add the Roasted Semolina little by little and slowly in the boiling water, at the same time mix it with a ladle or a hand whisker so that the Semolina wont form lumps.

6. Mix constantly until all the Semolina dissolves in the water, then add the sugar and mix it.

7. Once when all the water is evaporated and if you could see the rava is softened add 3 more ts of ghee and stir it.

8. Finally add the fried raisins,cashews and almonds and give a good stir so that it is nicely mixed with the Semolina Kesari.

9. Take off the Pudding/kesari from the pan and place it in a plate coated with a drop of ghee.

10 Once it is cooled cut them in to your favorite shapes.




Tips

> Don't burn any of the roasting items like Raisins/Cashew/Almonds mainly the Semolina/Rava. - Step 1 & 2

> Constantly stir the Rava so that it wont form lumps.

> Don't overcook the Rava/Semolina Step 6/7
