Okra Fry/ Vendakkai vathakal/Bhindi fry/Ladys Finger Fry

A veggie which gives math knowledge :-) yes this how my mom used to say whenever she cooks this Okra, initially i hate to eat okra may be because of its gluetin texture but nowadays it has become my favorite veggie.






Ingredients

Okra/Vendakkai/Ladys finger - 250 gms
Pearl Onion/Chinna vengayam - 8 nos
Grated/Shredded Coconut - 1 ts (Optional)
Extra Virgin Olive Oil - 1 to 2 ts
Salt for Taste

Thalippu/Tempering

Black Mustard seeds- 1 ts
Cumin Seeds - a pinch
Urad Dhal - 1 ts
Dried Red Chilli - 3 nos
Curry Leaves - 1 twig (Optional)
Asfoetida/Hing - a pinch

Method

1. First wash the okra in cold water and chop it really thin in rounds, also finely chop the pearl onion.

2. Take a wok, once it is heated add 1ts of oil then add Okra and stir fry it for 5 to 10 mins in medium heat, remove the okra and keep aside.

3. In the same wok add 1 ts of oil, once heated add the mustard wait till it splutter then add the remaining as per the order from the Thalippu item.

4. Now add the Onion and let it fry till it turns to golden brown.

5. Its time to add the okra, stir and add salt to taste, in medium heat let it cook for 5 to 10mins.

6. Now add the coconut grating and give a good stir and transfer to a bowl.


This dish goes well with Rasam Rice, Tomato Pulav and Curd rice.

Tips

> Liberal amount of Oil would give a crispy okra.
