Urad Dhal Vadai /Ulundhu Vadai/ Urad Dhal Patty/ Medhu Vadai/ Soft Patty






Ingredients

Urad Dhal/Ulundhu - 1 1/2 cup
Chana Dhal/ Kadala Paruppu - 1/4 cup
Garlic - 1 pod
Cumin Seeds/Jerragam - 1/4 ts
Asfoetida - a pinch
Salt for taste
Oil for deep frying

To be Chopped

Red Onion - 1 no medium size
Green Chilli - 3 to 4 nos
Organic Baby Carrot - 6 nos or Big Carrot - 1 no small size
Coriander leaves - 3 strands
Curry Leaves - 2 twig
Ginger - 1/4 inch

Method

1. Wash the Urad Dhal and Chana dhal two times with cold water and soak in 4 cups of cold water for about 3 to 4 hrs. Take a urad dhal and try to clip between your fingernails if the urad dhal breaks off then it has soaked nicely and good to grind.

2. For grinding it is best to use the Wet Grinder and while adding the dhal add it in teaspoon(little by little) without adding any water along with the garlic, let it grind for 10 to 15mins and when you try to take the dhal out it should be of a buttery ball (more like a butter)consistency.

3. Add all the chopped veggies and mix with the dhal nicely adjust salt accordingly. To get a spongy Vadai mix the batter nicely with your hands for 5mins.

4. Make a lemon size batter and make round shape with a hole in the center.

5. Boil the oil with medium heat and fry the vadai and place it in the paper towel.

Vadai is good to go with Coconut and Corainder/Cilantro Chutney.
